Ingredients
  

Pasta
  • 12 oz cheese tortellini fresh or frozen
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper diced
  • 1 cup spinach chopped
Dressing
  • 1 cup Italian dressing store-bought or homemade
Cheese
  • 1 cup mozzarella balls bocconcini or ciliegine
Herbs
  • 1 tbsp fresh basil chopped

Method
 

Cook the Tortellini
  1. Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions until al dente. Drain and rinse under cold water to cool.
Prepare the Salad
  1. In a large mixing bowl, combine the cooked tortellini, cherry tomatoes, cucumber, bell pepper, spinach, and mozzarella balls.
Add Dressing and Serve
  1. Pour the Italian dressing over the salad and toss gently to combine. Sprinkle with fresh basil before serving.
