Preparation
  1. Gather all your ingredients and tools: high-quality dark chocolate, fresh eggs, butter, sugar, and a pinch of salt. Prepare a mixing bowl, whisk or electric mixer, measuring scale or cups, and a springform pan lined with parchment paper.
  2. In a medium saucepan over low heat, combine the chopped dark chocolate with unsalted butter. Stir gently until melted into a glossy mixture.
  3. Separate the egg yolks and place them in a large mixing bowl. Add sugar and whisk until pale and creamy.
  4. Slowly pour the melted chocolate into the egg yolk mixture while continuously whisking.
  5. In another bowl, beat the egg whites until soft peaks form. Gently fold the whipped whites into the chocolate mixture.
