- Gather all your ingredients and tools: high-quality dark chocolate, fresh eggs, butter, sugar, and a pinch of salt. Prepare a mixing bowl, whisk or electric mixer, measuring scale or cups, and a springform pan lined with parchment paper.
- In a medium saucepan over low heat, combine the chopped dark chocolate with unsalted butter. Stir gently until melted into a glossy mixture.
- Separate the egg yolks and place them in a large mixing bowl. Add sugar and whisk until pale and creamy.
- Slowly pour the melted chocolate into the egg yolk mixture while continuously whisking.
- In another bowl, beat the egg whites until soft peaks form. Gently fold the whipped whites into the chocolate mixture.
