Ingredients
  

Salad Ingredients
  • 4 medium tomatoes diced
  • 2 medium cucumbers sliced
  • 1 cup red onion thinly sliced
  • 1 cup feta cheese crumbled (optional)
  • 1 tablespoon fresh parsley chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dijon mustard
  • 1 clove garlic minced
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Method
 

Prepare the Salad
  1. In a mixing bowl, combine the diced tomatoes, sliced cucumbers, red onion, feta cheese, and parsley.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, dijon mustard, minced garlic, salt, and black pepper until well combined.
Combine and Serve
  1. Pour the dressing over the salad and toss gently to combine. Serve immediately or chill for 30 minutes before serving.
