Ingredients
  

Crust
  • 1 cup Graham Cracker Crumbs Finely crushed for smooth texture
  • 1/4 cup Granulated Sugar
  • 1/2 cup Unsalted Butter Melted
Filling
  • 16 ounces Cream Cheese Room temperature
  • 1/2 cup Granulated Sugar
  • 1 teaspoon Vanilla Extract Pure recommended
  • 2 large Eggs Room temperature
  • 1 cup Fresh Strawberries Hulled and chopped
Topping
  • Powdered Sugar Optional for sprinkling on top

Method
 

Prepare the crust
  1. Preheat your oven to 350°F (175°C). In a medium bowl, mix together graham cracker crumbs, sugar, and melted butter. Press this mixture firmly into the bottom of a greased 9x9-inch baking pan.
Make the cheesecake filling
  1. In a large mixing bowl, combine cream cheese, granulated sugar, and vanilla extract. Use an electric mixer on medium speed until smooth and creamy. Add eggs one at a time, mixing just until combined.
Add the strawberries
  1. Gently fold in fresh strawberries. Take care not to overmix to keep strawberry bits intact.
