  • 3-4 pounds Pork Shoulder Well-marbled for tenderness
  • 1 medium Onion Diced
  • 4 cloves Garlic Fresh, minced
  • 1 tablespoon Oregano Dried, preferably Mexican
  • 1 tablespoon Cumin Freshly ground for best flavor
  • 1 tablespoon Chili Powder Mild, adjust to taste
  • 1/4 cup Lime Juice Freshly squeezed
  • to taste Salt and Pepper For seasoning
  • 2 leaves Bay Leaves Remove before serving
  • 1 cup Chicken Broth Low-sodium for moisture

Method
 

Preparation
  1. Gather all ingredients, including pork shoulder, onion, garlic, spices, and lime juice.
  2. Trim excess fat from the pork shoulder and cut into large chunks.
  3. Sear the pork chunks in a skillet over medium-high heat until golden brown on all sides.
  4. Transfer the browned pork to the slow cooker and add chopped onions, minced garlic, lime juice, and spices.
Cooking
  1. Cover the slow cooker and cook on low for 8 hours or until the pork is tender.
  2. Once cooked, shred the pork with two forks and mix with the juices.
  3. Serve in tacos or burrito bowls with your favorite toppings.
