Chicken Thighs
  • 4 pieces bone-in, skin-on chicken thighs about 1.5 lbs total
Seasoning
  • 2 tablespoons olive oil for drizzling
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper freshly ground
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika smoked or sweet
  • 1 teaspoon dried thyme

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, combine olive oil, salt, black pepper, garlic powder, paprika, and dried thyme.
  3. Pat the chicken thighs dry with paper towels and place them in the bowl with the seasoning mix. Rub the seasoning all over the chicken, ensuring it is well coated.
Cooking
  1. Place the seasoned chicken thighs skin-side up on a baking sheet.
  2. Roast in the preheated oven for 35-45 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy.
  3. Remove from the oven and let rest for 5 minutes before serving.
