Preparation
  1. Gather all your ingredients to make pollo asado, including chicken, citrus fruits, garlic, olive oil, and spices.
  2. In a large bowl, combine citrus juice, minced garlic, olive oil, and spices to create the marinade. Coat the chicken pieces in the marinade and let it sit covered in the refrigerator for at least 1 hour.
