Ingredients
  

Corn Mixture
  • 2 cups sweet corn fresh or frozen
  • 1 tablespoon olive oil for sautéing
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon lime juice freshly squeezed
Creamy Base
  • 1 cup cream cheese softened
  • 1 cup sour cream
  • 1 cup cotija cheese crumbled
  • 1 clove garlic minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Garnish
  • 2 tablespoons cilantro chopped
  • 1 tablespoon lime wedges for serving

Method
 

Prepare the Corn
  1. In a skillet over medium heat, add olive oil and sweet corn. Sauté for about 5-7 minutes until corn is slightly charred.
Mix the Dip
  1. In a mixing bowl, combine the sautéed corn, cream cheese, sour cream, cotija cheese, minced garlic, smoked paprika, chili powder, lime juice, salt, and black pepper. Mix until well combined.
Serve
  1. Transfer the dip to a serving dish and garnish with chopped cilantro. Serve with tortilla chips or fresh veggies.
