Prepare the Corn
- In a skillet over medium heat, add olive oil and sweet corn. Sauté for about 5-7 minutes until corn is slightly charred.
Mix the Dip
- In a mixing bowl, combine the sautéed corn, cream cheese, sour cream, cotija cheese, minced garlic, smoked paprika, chili powder, lime juice, salt, and black pepper. Mix until well combined.
Serve
- Transfer the dip to a serving dish and garnish with chopped cilantro. Serve with tortilla chips or fresh veggies.
