Prepare Ingredients
- Measure out 1 cup of cornmeal, 1 teaspoon of salt, and 2 cups of boiling water. Chop any fresh herbs or spices if desired.
Mix the Cornmeal and Water
- In a mixing bowl, combine the cornmeal and salt. Slowly pour in the boiling water while stirring continuously until it resembles a thick batter.
Shape the Dough
- Wet your hands and scoop out a golf ball-sized portion of dough. Flatten it into a disk about half an inch thick.
Heat the Skillet
- Preheat your skillet over medium-high heat with about ¼ inch of oil until hot.
Fry Until Golden Brown
- Carefully place the disks into the hot oil and fry for about 3-4 minutes on each side until golden brown.
Drain and Serve
- Remove from skillet and let drain on paper towels. Serve warm with butter or alongside your favorite dishes.
