Ingredients
  

Dry Ingredients
  • 1 cup Cornmeal Finely ground for smooth texture.
  • 1 teaspoon Salt Kosher salt preferred.
  • 1 teaspoon Baking Powder Aluminum-free for better rise.
Wet Ingredients
  • 2 cups Boiling Water Freshly boiled to activate cornmeal.
  • ¼ cup Vegetable Oil Neutral oil for frying.
Optional
  • 1 tablespoon Sugar For a hint of sweetness.

Method
 

Prepare Ingredients
  1. Measure out 1 cup of cornmeal, 1 teaspoon of salt, and 2 cups of boiling water. Chop any fresh herbs or spices if desired.
Mix the Cornmeal and Water
  1. In a mixing bowl, combine the cornmeal and salt. Slowly pour in the boiling water while stirring continuously until it resembles a thick batter.
Shape the Dough
  1. Wet your hands and scoop out a golf ball-sized portion of dough. Flatten it into a disk about half an inch thick.
Heat the Skillet
  1. Preheat your skillet over medium-high heat with about ¼ inch of oil until hot.
Fry Until Golden Brown
  1. Carefully place the disks into the hot oil and fry for about 3-4 minutes on each side until golden brown.
Drain and Serve
  1. Remove from skillet and let drain on paper towels. Serve warm with butter or alongside your favorite dishes.
