Ingredients
  

Rice Base
  • 1 cup long-grain white rice rinsed
  • 4 cups water for soaking
Flavoring
  • 1 cup milk can use almond or coconut milk for a dairy-free version
  • 1 cup sugar adjust to taste
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon plus more for garnish
  • 1 pinch salt
Serving
  • 2 cups ice for serving

Method
 

Prepare Rice
  1. In a large bowl, combine the rinsed rice and water. Let it soak for at least 4 hours or overnight.
Blend Ingredients
  1. After soaking, drain the rice and transfer it to a blender. Add 4 cups of fresh water and blend until smooth.
Strain Mixture
  1. Strain the blended mixture through a fine mesh strainer or cheesecloth into a large bowl, discarding the solids.
Add Flavorings
  1. To the strained rice water, add milk, sugar, vanilla extract, ground cinnamon, and a pinch of salt. Stir well to combine.
Chill and Serve
  1. Refrigerate the horchata for at least 1 hour before serving. Serve over ice and sprinkle with additional cinnamon if desired.

Notes

Horchata can be stored in the refrigerator for up to 3 days. Shake well before serving as ingredients may settle.
