Ingredients
  

Rice Mixture
  • 1 cup long-grain white rice rinsed and drained
  • 1 cup water for soaking
Horchata Base
  • 4 cups water for blending
  • 1 cup milk can use almond milk for a dairy-free version
  • 1 cup sugar adjust to taste
  • 1 teaspoon vanilla extract
  • 1 pinch salt
Garnish
  • 1 teaspoon ground cinnamon for sprinkling

Method
 

Prepare Rice
  1. In a large bowl, combine the rinsed rice, 1 cup of water, and the cinnamon stick. Let it soak for at least 3 hours or overnight for best results.
Blend Ingredients
  1. After soaking, discard the cinnamon stick. In a blender, combine the soaked rice and water mixture with 4 cups of fresh water, milk, sugar, vanilla extract, and salt. Blend until smooth.
Strain and Serve
  1. Strain the blended mixture through a fine mesh strainer into a pitcher, pressing down to extract as much liquid as possible. Discard the solids.
  2. Chill the horchata in the refrigerator for at least 30 minutes before serving. Serve over ice and sprinkle with ground cinnamon.

Notes

Horchata can be stored in the refrigerator for up to 4 days. Shake well before serving as separation may occur.
