Prepare Rice
- In a large bowl, combine the rinsed rice, 1 cup of water, and the cinnamon stick. Let it soak for at least 3 hours or overnight for best results.
Blend Ingredients
- After soaking, discard the cinnamon stick. In a blender, combine the soaked rice and water mixture with 4 cups of fresh water, milk, sugar, vanilla extract, and salt. Blend until smooth.
Strain and Serve
- Strain the blended mixture through a fine mesh strainer into a pitcher, pressing down to extract as much liquid as possible. Discard the solids.
- Chill the horchata in the refrigerator for at least 30 minutes before serving. Serve over ice and sprinkle with ground cinnamon.
