Ingredients
  

Shrimp Marinade
  • 1 pound large shrimp, peeled and deveined about 16-20 shrimp
  • 3 tablespoons olive oil extra virgin
  • 2 tablespoons lemon juice freshly squeezed
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon fresh parsley, chopped for garnish

Method
 

Prepare the Marinade
  1. In a mixing bowl, combine olive oil, lemon juice, minced garlic, paprika, salt, and black pepper. Mix well.
Marinate the Shrimp
  1. Add the shrimp to the marinade and toss to coat. Cover and refrigerate for at least 15 minutes.
Prepare the Skewers
  1. If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated shrimp onto the skewers.
Grill the Shrimp
  1. Preheat the grill to medium-high heat. Grill the shrimp skewers for about 2-3 minutes on each side, or until the shrimp are opaque and cooked through.
Serve
  1. Remove from the grill and garnish with fresh parsley. Serve immediately.
