- Gather all your ingredients: long-grain rice, onion, garlic, bell pepper, diced tomatoes, and spices.
- Heat a large skillet over medium heat. Add olive oil, then toss in diced onions and bell peppers. Sauté for about 5 minutes until the onions turn translucent.
- Stir in minced garlic and cook for an additional minute. Next, add the rice and stir well, allowing it to absorb flavors for about 2 minutes.
- Pour in the diced tomatoes with their juice and chicken broth. Add salt, cumin, and smoked paprika. Bring to a gentle boil.
- Reduce the heat to low, cover the skillet, and let it simmer for 20 minutes. Do not lift the lid during this time.
- Once cooking time is complete, remove from heat but keep covered for another 5 minutes. Fluff the rice with a fork before serving.
