Cooking Steps
  1. Gather all your ingredients: long-grain rice, onion, garlic, bell pepper, diced tomatoes, and spices.
  2. Heat a large skillet over medium heat. Add olive oil, then toss in diced onions and bell peppers. Sauté for about 5 minutes until the onions turn translucent.
  3. Stir in minced garlic and cook for an additional minute. Next, add the rice and stir well, allowing it to absorb flavors for about 2 minutes.
  4. Pour in the diced tomatoes with their juice and chicken broth. Add salt, cumin, and smoked paprika. Bring to a gentle boil.
  5. Reduce the heat to low, cover the skillet, and let it simmer for 20 minutes. Do not lift the lid during this time.
  6. Once cooking time is complete, remove from heat but keep covered for another 5 minutes. Fluff the rice with a fork before serving.
