Ingredients
  

Vegetables
  • 2 medium courgettes sliced thinly lengthwise
Filling
  • 200 grams ricotta cheese
  • 50 grams parmesan cheese grated
  • 1 tablespoon fresh basil chopped
  • 1 clove garlic minced
  • 1 pinch salt
  • 1 pinch black pepper
Topping
  • 50 grams mozzarella cheese shredded
  • 2 tablespoons olive oil for drizzling

Method
 

Prepare the Courgettes
  1. Preheat the griddle pan over medium heat. Slice the courgettes lengthwise into thin strips. Grill the strips for about 2-3 minutes on each side until tender and slightly charred. Remove from heat and set aside.
Make the Filling
  1. In a mixing bowl, combine the ricotta cheese, grated parmesan, chopped basil, minced garlic, salt, and black pepper. Mix until well combined.
Assemble the Rolls
  1. Take a grilled courgette strip, place a spoonful of the cheese mixture at one end, and roll it up tightly. Repeat with the remaining strips and filling.
Bake the Rolls
  1. Preheat the oven to 180°C (350°F). Place the courgette rolls in a baking dish, sprinkle with shredded mozzarella cheese, and drizzle with olive oil. Bake for 10-15 minutes until the cheese is melted and bubbly.
Serve
  1. Remove from the oven and let cool for a few minutes before serving. Enjoy your delicious courgette rolls warm.

Notes

These rolls can be made ahead of time and baked just before serving. You can also add other herbs or spices to the filling for extra flavor.
