Method
Prepare the Courgettes
- Preheat the griddle pan over medium heat. Slice the courgettes lengthwise into thin strips. Grill the strips for about 2-3 minutes on each side until tender and slightly charred. Remove from heat and set aside.
Make the Filling
- In a mixing bowl, combine the ricotta cheese, grated parmesan, chopped basil, minced garlic, salt, and black pepper. Mix until well combined.
Assemble the Rolls
- Take a grilled courgette strip, place a spoonful of the cheese mixture at one end, and roll it up tightly. Repeat with the remaining strips and filling.
Bake the Rolls
- Preheat the oven to 180°C (350°F). Place the courgette rolls in a baking dish, sprinkle with shredded mozzarella cheese, and drizzle with olive oil. Bake for 10-15 minutes until the cheese is melted and bubbly.
Serve
- Remove from the oven and let cool for a few minutes before serving. Enjoy your delicious courgette rolls warm.
