Ingredients
  

Fritter Mixture
  • 2 cups fresh corn kernels can use canned or frozen
  • 1 cup all-purpose flour
  • 1 large egg beaten
  • 1 cup milk or buttermilk
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon olive oil for frying

Method
 

Prepare the Fritter Batter
  1. In a mixing bowl, combine the corn, flour, egg, milk, baking powder, salt, black pepper, and parsley. Mix until well combined.
Cook the Fritters
  1. Heat olive oil in a frying pan over medium heat. Drop spoonfuls of the batter into the pan, flattening slightly.
  2. Cook for about 3-4 minutes on each side or until golden brown. Remove and drain on paper towels.
Serve
  1. Serve warm with your favorite dipping sauce or enjoy plain.
