Ingredients
  

Chicken
  • 1 pound boneless chicken breast sliced into thin strips
Vegetables
  • 4 cups cabbage shredded
  • 1 cup carrots julienned
  • 1 cup bell pepper sliced
  • 2 cloves garlic minced
  • 1 inch ginger grated
Sauce
  • 3 tablespoons soy sauce low sodium preferred
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch mixed with 2 tablespoons of water
Garnish
  • 2 tablespoons green onions sliced
  • 1 tablespoon sesame seeds toasted

Method
 

Prepare the Chicken
  1. Heat a wok over medium-high heat and add sesame oil. Once hot, add the sliced chicken and stir-fry until cooked through, about 5-7 minutes.
Add Vegetables
  1. Add garlic, ginger, cabbage, carrots, and bell pepper to the wok. Stir-fry for another 5 minutes until vegetables are tender-crisp.
Add Sauce
  1. Pour in the soy sauce, rice vinegar, and cornstarch mixture. Stir well to combine and cook for an additional 2-3 minutes until the sauce thickens.
Serve
  1. Remove from heat, garnish with green onions and sesame seeds, and serve hot over rice or noodles.

Notes
