Ingredients
  

Chicken and Vegetables
  • 1 lb boneless, skinless chicken breasts sliced thinly
  • 1 medium green bell pepper sliced
  • 1 medium red bell pepper sliced
  • 1 medium onion sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Cheese and Bread
  • 8 slices provolone cheese

Method
 

Prepare the Chicken and Vegetables
  1. Heat olive oil in a skillet over medium heat. Add the sliced chicken, garlic powder, salt, and black pepper. Cook until the chicken is no longer pink, about 5-7 minutes.
  2. Add the sliced bell peppers and onion to the skillet. Sauté until the vegetables are tender, about 5-7 minutes.
Assemble the Sandwiches
  1. Preheat the toaster oven. Once the chicken and vegetables are cooked, layer the mixture onto the toasted hoagie rolls.
  2. Top each sandwich with 2 slices of provolone cheese. Place the sandwiches back in the toaster oven until the cheese is melted, about 3-5 minutes.
Serve
  1. Remove the sandwiches from the toaster oven and serve hot.
