Ingredients
  

Chicken and Marinade
  • 1 pound boneless, skinless chicken breasts cut into 1-inch cubes
  • 1/4 cup olive oil for marinade
  • 2 tablespoons lemon juice freshly squeezed
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Vegetables
  • 1 bell pepper red cut into 1-inch pieces
  • 1 bell pepper green cut into 1-inch pieces
  • 1 medium onion cut into wedges

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine olive oil, lemon juice, garlic powder, paprika, cumin, salt, and black pepper. Add the chicken cubes and mix well to coat. Cover and refrigerate for at least 30 minutes.
Prepare the Skewers
  1. If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated chicken and vegetables onto the skewers, alternating between chicken and vegetables.
Grill the Kabobs
  1. Preheat the grill to medium-high heat. Place the skewers on the grill and cook for 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
Serve
  1. Remove the kabobs from the grill and let them rest for a few minutes. Serve warm with your favorite dipping sauce or over rice.
