  • 1 can Black Beans Rinse well before adding.
  • 1 cup Corn Fresh or frozen, thawed if frozen.
  • 1 can Diced Tomatoes Fire-roasted for smoky flavor.
  • 1 cup Sour Cream Dollop on top before serving.

Preparation
  1. Gather all ingredients including cooked chicken, tortillas, enchilada sauce, cheese, and any additional toppings. Preheat oven to 350°F (175°C).
Layer the Base
  1. Spread a thin layer of enchilada sauce in a large baking dish. Tear tortillas into pieces and scatter over the sauce.
Add the Chicken Filling
  1. Combine shredded chicken with enchilada sauce in a bowl and spoon over the tortilla layer. Add black beans or corn if desired.
