  • 1 cup Enchilada Sauce Opt for a brand with authentic flavors.
  • 1 can Black Beans Rinse for better texture.
  • 1 cup Corn Frozen corn is a great alternative.
  • 2 cups Shredded Cheese Blend of cheddar and Monterey Jack.
  • 8 pieces Tortillas Corn tortillas preferred.
  • 1 medium Onion Yellow or white onions recommended.
  • 1 medium Bell Pepper Any color, chopped.
  • 1/4 cup Cilantro Fresh, for garnish.
  • 1/2 cup Sour Cream Greek yogurt can be used as a substitute.

Method
 

Preparation
  1. Gather all your ingredients including cooked chicken, enchilada sauce, corn tortillas, cheese, and toppings. Preheat your oven to 350°F (175°C).
  2. Shred or chop your cooked chicken into bite-sized pieces and mix with half of the enchilada sauce.
  3. In a baking dish, spread a thin layer of enchilada sauce, layer corn tortillas, spoon half of the chicken mixture, and sprinkle with cheese. Repeat layers, finishing with tortillas, sauce, and cheese on top.
