Method
Prepare the Ribs
- Preheat the grill to medium heat (about 300°F).
- In a bowl, mix together all the dry rub ingredients.
- Rub the olive oil over the beef ribs, then generously apply the dry rub all over the ribs.
- Let the ribs sit at room temperature for about 30 minutes to absorb the flavors.
Grill the Ribs
- Place the ribs on the grill bone side down and close the lid.
- Cook for about 3 hours, turning every 30 minutes and basting with barbecue sauce during the last hour.
- Check the internal temperature; it should reach at least 190°F for tender ribs.
- Once done, remove the ribs from the grill and let them rest for 10-15 minutes before slicing.
