Ingredients
  

Beans
  • 1 cup dried navy beans soaked overnight
Vegetables
  • 1 medium onion chopped
  • 2 cloves garlic minced
Liquids
  • 2 cups water
  • 1 cup tomato sauce
  • 1 tablespoon apple cider vinegar
Spices
  • 2 tablespoons brown sugar
  • 1 teaspoon mustard powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Method
 

Prepare the Beans
  1. Rinse the soaked navy beans and place them in a large pot. Cover with fresh water and bring to a boil. Reduce heat and simmer for about 1 hour, or until tender.
Cook the Vegetables
  1. In a separate pan, sauté the chopped onion and minced garlic until translucent.
Combine Ingredients
  1. Preheat the oven to 325°F (165°C). Drain the cooked beans and add them to a baking dish along with the sautéed vegetables, tomato sauce, water, apple cider vinegar, brown sugar, mustard powder, smoked paprika, salt, and pepper.
Bake the Beans
  1. Stir everything together and cover the dish with foil. Bake in the preheated oven for 1 hour, then remove the foil and bake for an additional 30 minutes until thickened.
