  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 4 cloves fresh garlic, minced
  • 2 tbsp extra virgin olive oil
  • 6 cups low-sodium chicken broth
  • 2 large fresh lemons (zest and juice)
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • ¼ cup fresh parsley, chopped
  • 1 tsp fresh thyme, chopped
  • Salt & pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté minced garlic, diced onions, carrots, and celery until soft.
  2. Add chicken breasts and broth; simmer for about 20 minutes until the chicken is cooked through.
  3. Remove chicken, shred it with two forks, and return it to the pot along with lemon zest and juice.
  4. Stir in parsley and thyme; let simmer for an additional 5–10 minutes.
  5. Adjust seasoning with salt and pepper before serving warm.
