Ingredients

  • 2 cups fresh cilantro leaves
  • 1/4 cup pine nuts (toasted)
  • 1/2 cup Parmesan cheese (freshly grated)
  • 2 garlic cloves
  • 2 tbsp lemon juice (freshly squeezed)
  • 1/2 cup extra virgin olive oil
  • Salt & pepper to taste

Instructions

  1. Toast the pine nuts in a dry skillet over medium heat for about 3-5 minutes until golden brown. Stir frequently.
  2. In a food processor, combine cilantro leaves, toasted pine nuts, garlic cloves, and Parmesan cheese. Pulse until finely chopped.
  3. With the processor running, slowly drizzle in olive oil until smooth. Add lemon juice and season with salt and pepper to taste.
  4. Transfer to an airtight container; refrigerate for up to one week or serve immediately.
