  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup fresh corn (or frozen)
  • 2 limes, juiced
  • 1 red bell pepper, diced
  • ½ cup fresh cilantro, chopped
  • 1 tsp cumin powder
  • Salt and pepper to taste

Instructions

  1. Cook the farro by boiling 3 cups of water in a medium saucepan. Add the farro and simmer on low heat for 20-25 minutes until tender. Drain any excess water and let cool.
  2. While the farro cooks, dice the red bell pepper and chop the cilantro.
  3. In a large bowl, combine cooled farro, black beans, corn, bell pepper, and cilantro.
  4. Squeeze lime juice over the mixture, add cumin powder, salt, and pepper. Stir gently until well combined.
