- 1 can (15 oz) black beans, rinsed

- 1 jalapeño pepper, finely chopped (seeds removed for less heat)

Instructions
- Cook the farro in boiling salted water for about 20-25 minutes until tender but slightly chewy. Drain and allow to cool.
- Rinse the black beans under cold water and set aside.
- In a bowl, whisk together lime juice, olive oil, salt, pepper, and jalapeño until well combined.
- In a large bowl, combine cooled farro with black beans, cherry tomatoes, red onion, cilantro, and dressing. Toss until everything is evenly coated.
- Chill in the refrigerator for at least 30 minutes before serving to meld flavors.
