Ingredients

  • 1 cup cooked farro
  • 1 can (15 oz) black beans, rinsed
  • Juice of 2 limes
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp olive oil
  • 1 jalapeño pepper, finely chopped (seeds removed for less heat)
  • Salt and pepper to taste

Instructions

  1. Cook the farro in boiling salted water for about 20-25 minutes until tender but slightly chewy. Drain and allow to cool.
  2. Rinse the black beans under cold water and set aside.
  3. In a bowl, whisk together lime juice, olive oil, salt, pepper, and jalapeño until well combined.
  4. In a large bowl, combine cooled farro with black beans, cherry tomatoes, red onion, cilantro, and dressing. Toss until everything is evenly coated.
  5. Chill in the refrigerator for at least 30 minutes before serving to meld flavors.
