  • 2 cups cooked rice noodles
  • 2 tbsp fresh ginger root, grated
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp honey or maple syrup
  • 2 tbsp freshly squeezed lime juice
  • 1 tsp toasted sesame oil

Instructions

  1. Wash all greens and veggies thoroughly. Chop into bite-sized pieces.
  2. Cook rice noodles according to package instructions; drain and rinse under cold water.
  3. In a small bowl, whisk together grated ginger, soy sauce, honey or maple syrup, lime juice, and sesame oil until smooth.
  4. In a large bowl, combine all prepared vegetables, rice noodles, and mint leaves. Drizzle with dressing and toss to combine.
  5. Let the salad sit for about 10 minutes before serving chilled or at room temperature.
