Instructions
- Wash all greens and veggies thoroughly. Chop into bite-sized pieces.
- Cook rice noodles according to package instructions; drain and rinse under cold water.

- In a large bowl, combine all prepared vegetables, rice noodles, and mint leaves. Drizzle with dressing and toss to combine.
