  • 1 cup quinoa
  • 1 cup shelled edamame
  • 1 cup bell peppers (mixed colors), diced
  • 1 cup English cucumber, diced
  • 3 green onions, thinly sliced
  • ΒΌ cup fresh cilantro, chopped
  • Juice of 1 lime
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water until clear. In a saucepan, combine quinoa with 2 cups water. Boil over medium heat, then reduce to low, cover, and simmer for 15 minutes until fluffy.
  2. Chop bell peppers and cucumber into bite-sized pieces; slice green onions and chop cilantro.
  3. In a small bowl, whisk together olive oil, lime juice, salt, and pepper for the dressing.
  4. In a large bowl, combine cooked quinoa (cooled slightly), edamame, chopped veggies, cilantro, and drizzle with dressing.
  5. Toss gently to mix well; adjust seasoning if necessary.
