  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced
  • 1 medium yellow onion, diced
  • 6 cups low-sodium chicken broth
  • Juice of 23 fresh limes
  • 2 ripe avocados, mashed
  • 1 cup fresh cilantro, chopped
  • 2 tsp ground cumin
  • 1 tsp chili powder
  • Salt to taste
  • ½ cup sour cream or Greek yogurt (optional)

Instructions

  1. Boil chicken breasts in water for 15-20 minutes until cooked. Shred once cooled.
  2. In the same pot, heat olive oil over medium heat. Sauté diced onion until translucent, then add garlic and sauté for an additional minute.
  3. Add chicken broth, cumin, chili powder, and salt; simmer for 10 minutes.
  4. Stir in shredded chicken and lime juice; simmer for another 5 minutes.
  5. Fold in mashed avocados just before serving.
  6. Garnish with cilantro and a dollop of sour cream if desired.
