Instructions

  1. Hard-boil the eggs: Place eggs in a saucepan, cover with cold water, and bring to a gentle boil. Once boiling, cover and turn off the heat. Let sit for 12 minutes.
  2. Cool the eggs: Transfer eggs to an ice bath for at least 5 minutes.
  3. Peel the eggs: Tap each egg against a hard surface to crack the shell, then peel under running water.
  4. Make the filling: Slice each egg in half lengthwise, scoop out yolks into a bowl, and mash with mayonnaise and Dijon mustard until smooth.
