- 4 dried ancho chilis, soaked
- 2 dried guajillo chilis, soaked
- 2 tsp ground cumin
- 2 tsp dried oregano
- 4 cups low-sodium beef broth
- 12 corn tortillas
- Juice of 2 limes
- Fresh cilantro and onion for garnish
Instructions
- Trim excess fat from the chuck roast and season generously with salt and pepper.
- Sauté chopped onions over medium heat until translucent; add minced garlic and cook for 1 minute more.
