  • 1 can (14.5 oz) diced fire-roasted tomatoes
  • 1 cup chopped bell peppers (mix of red and green)
  • 2 cups shredded cheddar cheese, divided
  • 1 cup cornmeal
  • 1 tbsp baking powder
  • 1 cup whole milk
  • 2 large eggs
  • Salt, to taste

Instructions
