- 1 cup salt (for brine)
- 1/2 cup sugar (for brine)
- 4 quarts water (for brine)
- 2 cups hickory or applewood chips (soaked in water)
- 1/2 cup unsalted butter (softened)
- 2 tbsp fresh rosemary (chopped)
- 2 tbsp fresh thyme (chopped)
- 2 tsp garlic powder
- 2 tsp black pepper
Instructions
- Prepare the brine: In a large pot, dissolve salt and sugar in water. Let cool completely.
- Brine the turkey: Submerge the turkey in the cooled brine for at least 12 hours in the refrigerator.
- Preheat your smoker to 225°F (107°C) and add soaked wood chips.
- Pat the turkey dry, then rub softened butter under the skin and season with herbs and spices.
- Place the turkey breast-side up in the smoker and cook for approximately 30 minutes per pound, monitoring the internal temperature.
- Once reaching 165°F (75°C), remove from the smoker and let rest for at least 30 minutes before carving.
