  • 1 cup shredded mozzarella cheese
  • 1 large egg
  • 2 tsp taco seasoning

  • 1/2 lb ground turkey or beef (lean)
  • 1 cup assorted toppings (lettuce, tomatoes, jalapeños)

Instructions

  1. Preheat oven to 425°F (220°C). Steam cauliflower florets until tender and pulse in a food processor until rice-like.
  2. In a bowl, mix riced cauliflower, mozzarella, egg, and taco seasoning until combined.
  3. Spread the mixture onto a parchment-lined baking sheet into a round shape about half an inch thick. Bake for 15-20 minutes until golden brown.
  4. Cook ground turkey or beef in olive oil over medium heat until browned; season with extra taco seasoning.
  5. Remove crust from oven, layer cooked meat evenly on top, followed by cheese and desired toppings. Bake for another 5-10 minutes until cheese melts.
