- 8 oz penne or fusilli pasta
- 4 cups fresh spinach
- 1 can (14 oz) artichoke hearts, drained and chopped
- 8 oz cream cheese, softened
- 1 cup shredded mozzarella cheese
- ½ cup freshly grated Parmesan cheese
- 3 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Boil salted water in a large pot and cook pasta until al dente; reserve ½ cup of pasta water before draining.
- In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, then add spinach and cook until wilted.
- Fold in chopped artichokes and warm through.
- Lower heat and mix in cream cheese until melted. Gradually stir in mozzarella and Parmesan until smooth.
- Combine the cooked pasta with the sauce; add reserved pasta water for desired creaminess.
- Season with salt and pepper to taste, garnish if desired, and serve hot.
