Description

Spinach-Artichoke-Dip Pasta is a creamy, cheesy delight that combines the flavors of your favorite dip with pasta, making it the ultimate comfort food for any occasion.


Ingredients

  • 8 oz penne or fusilli pasta
  • 4 cups fresh spinach
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 8 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • ½ cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Boil salted water in a large pot and cook pasta until al dente; reserve ½ cup of pasta water before draining.
  2. In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, then add spinach and cook until wilted.
  3. Fold in chopped artichokes and warm through.
  4. Lower heat and mix in cream cheese until melted. Gradually stir in mozzarella and Parmesan until smooth.
  5. Combine the cooked pasta with the sauce; add reserved pasta water for desired creaminess.
  6. Season with salt and pepper to taste, garnish if desired, and serve hot.
