  • 1 cup plain breadcrumbs
  • 2 large eggs
  • 1/2 cup ketchup (divided)
  • 1 medium onion (finely chopped)
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté the chopped onion until translucent.
  3. In a large bowl, combine ground turkey, sautéed onion, breadcrumbs, eggs, half of the ketchup, garlic powder, salt, pepper, and Italian seasoning; mix gently until just combined.
  4. Spray a muffin tin with nonstick spray or use paper liners; fill each cup three-quarters full with the mixture.
  5. Top each muffin with a dollop of the remaining ketchup.
  6. Bake for 20-25 minutes or until the internal temperature reaches 165°F (74°C) and tops are golden brown.
