- 4 large flour tortillas

- 2 green onions, chopped
- ½ cup sour cream
- 2 tsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Heat olive oil in a skillet over medium heat; sauté minced garlic until fragrant.
- Season chicken breasts with salt and pepper; cook in the skillet until golden brown (7-8 minutes per side). Remove from heat and let cool slightly before shredding.
- In a large bowl, combine shredded chicken, half of the cheese, enchilada sauce, and green onions; mix until well-coated.
- Lay each tortilla flat; place generous amounts of the chicken mixture in the center. Roll tightly like burritos.
- Place rolled tortillas seam-side down in a greased baking dish; pour remaining enchilada sauce on top and sprinkle with leftover cheese. Bake for 20-25 minutes until bubbly and golden brown.
- Let cool slightly before slicing into bite-sized pieces. Serve warm with sour cream on the side.
