- 3 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup bell peppers, sliced
- 1 cup cucumber, sliced
- 1/4 cup fresh cilantro, torn
- 1/4 cup fresh mint, torn
- Juice of 2 limes
- 3 tbsp low-sodium soy sauce
- 2 tbsp natural peanut butter
- 1 tbsp honey or maple syrup
- 1 tsp chili flakes (adjust to taste)
- Salt and pepper to taste
Instructions
- Preheat the grill or stovetop pan over medium heat. Season chicken breasts with salt and pepper. Cook for about 6-7 minutes per side until golden brown and cooked through.
- While the chicken cooks, slice bell peppers and cucumber into thin strips.
- In a small bowl, whisk together lime juice, soy sauce, peanut butter, honey, and chili flakes until smooth.
- Once the chicken is cooked and rested for a few minutes, slice it into bite-sized pieces. In a large bowl, combine chicken with veggies and drizzle with dressing. Toss gently until everything is coated.
- Just before serving, sprinkle torn mint and cilantro over the salad.
