Instructions

  1. Rinse the sago pearls under cold water until clear.
  2. In a saucepan, combine the rinsed sago and water; bring to a boil over medium heat.
  3. Reduce heat and simmer for about 15 minutes, stirring occasionally until translucent.
  4. Drain the pearls in a fine mesh strainer and rinse under cold water to cool.
  5. In another saucepan, heat coconut milk and sugar over low heat until sugar dissolves, avoiding boiling.
  6. Mix cooled sago with sliced strawberries and half of the coconut sauce gently.
  7. Serve chilled in bowls, drizzled with remaining coconut sauce and garnished with mint leaves if desired.
