- 2 cups fresh spinach
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 carrot, diced
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon coriander
- Juice of 1 lemon
Instructions
- Prepare your ingredients by chopping the onion, dicing the carrot, and mincing the garlic.
- In a large pot, heat olive oil over medium heat. Sauté the onion and garlic until fragrant.
- Add diced carrots, cumin, and coriander; cook for 3-4 minutes until spices are fragrant.
- Stir in rinsed red lentils and vegetable broth. Bring to a boil, then reduce to a simmer.
- After 15-20 minutes, when lentils are tender, add fresh spinach and stir until wilted.
- Remove from heat and stir in lemon juice before serving.
