Ingredients

  • 2 cups fresh spinach
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 carrot, diced
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • Juice of 1 lemon

Instructions

  1. Prepare your ingredients by chopping the onion, dicing the carrot, and mincing the garlic.
  2. In a large pot, heat olive oil over medium heat. Sauté the onion and garlic until fragrant.
  3. Add diced carrots, cumin, and coriander; cook for 3-4 minutes until spices are fragrant.
  4. Stir in rinsed red lentils and vegetable broth. Bring to a boil, then reduce to a simmer.
  5. After 15-20 minutes, when lentils are tender, add fresh spinach and stir until wilted.
  6. Remove from heat and stir in lemon juice before serving.
