  • ½ cup brown sugar

  • ½ cup unsalted butter, melted
  • 2 cups apples, peeled and chopped (Granny Smith or Honeycrisp)
  • 1 tsp vanilla extract

Instructions

  3. In another bowl, mix the melted butter, eggs, milk, and vanilla until smooth.
  4. Gently fold the wet mixture into the dry ingredients until just combined; it’s okay if there are lumps.
  5. Carefully add the chopped apples and fold gently until evenly distributed.
  6. Scoop the batter into muffin tins lined with paper cups or greased well. Bake for 18-22 minutes until golden brown and a toothpick comes out clean.
