Ingredients

Scale
  • 12 cups popped popcorn
  • 1 cup light corn syrup
  • 1 cup dark brown sugar
  • ½ cup unsalted butter
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 cup roasted salted peanuts

Instructions

  1. 1. Pop the popcorn according to package instructions and spread it on a parchment-lined baking sheet.
  2. 2. In a medium saucepan over medium heat, combine corn syrup, brown sugar, butter, and salt. Stir until melted and bubbling (about 5 minutes).
  3. 3. Boil without stirring for an additional 4-5 minutes until it turns golden brown. Remove from heat and stir in vanilla extract.
  4. 4. Pour the warm caramel over the popcorn in batches, folding gently until fully coated.

  6. 6. Grease hands with butter or cooking spray and form small balls (about 2 inches in diameter). Let cool completely on parchment paper before serving.
