  • 1 cup full-fat coconut milk
  • 1/3 cup granulated sugar
  • Pinch of salt
  • 2 ripe mangoes (sliced)
  • Optional: Toasted sesame seeds (for garnish), fresh mint leaves (for garnish)

Instructions

  1. Soak the Rice: Rinse 1 cup of glutinous rice until water runs clear. Soak in cold water for at least 4 hours or overnight.
  2. Steam the Rice: Drain and steam soaked rice in a cheesecloth-lined steamer over simmering water for 25-30 minutes until tender.
  3. Make Coconut Sauce: In a saucepan over medium heat, mix 1 cup coconut milk, 1/3 cup sugar, and a pinch of salt. Stir until sugar dissolves; do not boil.
  4. Combine Rice and Sauce: Transfer steamed rice to a bowl, pour half of the warm coconut sauce over it, and let it absorb for 15 minutes.
  5. Prepare Mangoes: Peel and slice the two ripe mangoes into wedges or cubes.
  6. Serve: On serving plates, create a bed of sticky rice topped with mango slices. Drizzle remaining coconut sauce and garnish with optional sesame seeds or mint leaves.
