Instructions
- Soak the Rice: Rinse 1 cup of glutinous rice until water runs clear. Soak in cold water for at least 4 hours or overnight.
- Steam the Rice: Drain and steam soaked rice in a cheesecloth-lined steamer over simmering water for 25-30 minutes until tender.
- Make Coconut Sauce: In a saucepan over medium heat, mix 1 cup coconut milk, 1/3 cup sugar, and a pinch of salt. Stir until sugar dissolves; do not boil.
- Combine Rice and Sauce: Transfer steamed rice to a bowl, pour half of the warm coconut sauce over it, and let it absorb for 15 minutes.
- Prepare Mangoes: Peel and slice the two ripe mangoes into wedges or cubes.
