  • 2 medium sweet potatoes (about 1 cup mashed)

  • 1/4 cup light brown sugar
  • 1 egg + 1 tbsp water (for egg wash)

Instructions

  1. Preheat oven to 400°F (200°C) and line two baking sheets with parchment paper.
  2. Bake sweet potatoes for about 45 minutes until soft; let cool, then mash in a bowl.
  3. Mix in cinnamon, nutmeg, and brown sugar until well combined.
  4. Roll out puff pastry on a floured surface and cut into triangles.
  5. Place about 1 tablespoon of filling at the wide end of each triangle, roll tightly towards the pointy end, and tuck edges to form crescent shapes.
  6. Brush with egg wash, place on prepared baking sheets, and bake for 20-25 minutes until golden brown.
