- 2 medium sweet potatoes (about 500g)
- 1 can (15 oz) black beans, rinsed and drained
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 2 tsp ground cumin
- 1 cup whole wheat breadcrumbs
- 1 large egg (or 1 flax egg)
- Salt and pepper to taste
- 2 tbsp olive oil (for cooking)
Instructions
- Preheat oven to 400°F (200°C). Roast sweet potatoes wrapped in foil for about 45 minutes until tender.
- In a skillet over medium heat, sauté chopped onions in olive oil until translucent (~5 minutes), then add minced garlic for another minute.
- In a large bowl, mash roasted sweet potatoes, stir in sautéed onions & garlic, black beans (lightly mashed), cumin, salt, pepper, and breadcrumbs until combined.
- Add the beaten egg or flax egg as a binder; mix well.
- Shape mixture into patties (~½ inch thick) and refrigerate for at least 30 minutes.
- Heat olive oil in a skillet over medium heat and cook each patty for about 4-5 minutes per side until golden brown.
