  • 1 cup mashed sweet potatoes (about 2 medium sweet potatoes)
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/4 cup unsalted butter, cold
  • 3/4 cup whole milk or buttermilk
  • 1 tbsp sugar
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 400°F (200°C). Roast the sweet potatoes until tender, about 45 minutes. Allow to cool slightly, then peel and mash.
  2. In a large bowl, whisk together flour, baking powder, sugar, and salt until combined.
  3. Cut the cold butter into small cubes and mix into the dry ingredients using a pastry cutter until it resembles coarse crumbs.
  4. Fold in the mashed sweet potatoes until just combined.
  5. Gradually add milk while mixing gently to form a soft dough that holds together without being sticky.
  6. Turn the dough onto a floured surface and pat down to about 1-inch thick. Cut out biscuits with a round cutter and place them on a lined baking sheet.
  7. Bake for 15-20 minutes or until golden brown.
