Instructions
- Preheat your oven to 400°F (200°C). Roast the sweet potatoes until tender, about 45 minutes. Allow to cool slightly, then peel and mash.
- In a large bowl, whisk together flour, baking powder, sugar, and salt until combined.
- Cut the cold butter into small cubes and mix into the dry ingredients using a pastry cutter until it resembles coarse crumbs.
- Fold in the mashed sweet potatoes until just combined.
- Gradually add milk while mixing gently to form a soft dough that holds together without being sticky.
- Turn the dough onto a floured surface and pat down to about 1-inch thick. Cut out biscuits with a round cutter and place them on a lined baking sheet.
