  • 1/2 cup brown sugar
  • 2 tbsp chili powder
  • 2 tsp garlic powder
  • 1/4 cup olive oil
  • 1/4 cup soy sauce (low-sodium)
  • 2 tbsp lemon juice (freshly squeezed)
  • 2 tsp fresh thyme (chopped)
  • 2 tsp fresh rosemary (chopped)

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Rinse the turkey thoroughly inside and out with cold water, then pat dry.
  3. In a medium bowl, combine brown sugar, chili powder, garlic powder, olive oil, soy sauce, lemon juice, thyme, and rosemary to form a thick paste.
  4. Gently lift the turkey skin at the breast area and rub some spice mixture underneath; cover all surfaces with the remaining rub.
  5. Place the turkey breast-side up on a roasting rack in a large pan and roast for approximately 13 minutes per pound until it reaches an internal temperature of 165°F (74°C).
  6. Baste every 30 minutes to maintain moisture. Once cooked, let it rest for at least 30 minutes before carving.
