  • 1 cup caster sugar
  • 1 tsp white vinegar
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
  • 1 cup heavy cream
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 225°F (110°C) and line a baking sheet with parchment paper.
  2. In a clean mixing bowl, whip room temperature egg whites until frothy. Gradually add caster sugar while continuing to whip until stiff peaks form.
  3. Gently fold in white vinegar and vanilla extract.
  4. Spoon the meringue onto the prepared baking sheet, shaping it into a round disk with slightly raised edges.
  5. Bake for about 90 minutes until dry on the outside but soft inside.
  6. Turn off the oven and let the pavlova cool completely inside.
  7. Whip heavy cream to soft peaks and fold in vanilla extract.
  8. Top the cooled pavlova with whipped cream and an array of fresh berries just before serving.
