Description

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 tsp pure vanilla extract
  • 1 cup sour cream
  • 2 large ripe peaches, diced
  • 1 cup mixed berries (strawberries, blueberries, raspberries)

Instructions

  1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs and melted butter in a bowl. Press firmly into the bottom of a springform pan.
  2. Bake for 10 minutes until golden. Allow to cool.
  3. In a large bowl, beat cream cheese and sugar until smooth. Mix in sour cream and vanilla until well blended.
  4. Fold in diced peaches and mixed berries gently.
  5. Pour filling over the cooled crust. Bake at 325°F (160°C) for about 50 minutes until set but slightly jiggly in the center.
  6. Cool completely then refrigerate for at least four hours or overnight before serving.
