- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 2 tsp pure vanilla extract
- 1 cup sour cream
- 2 large ripe peaches, diced
- 1 cup mixed berries (strawberries, blueberries, raspberries)
Instructions
- Preheat oven to 350°F (175°C). Combine graham cracker crumbs and melted butter in a bowl. Press firmly into the bottom of a springform pan.
- Bake for 10 minutes until golden. Allow to cool.
- In a large bowl, beat cream cheese and sugar until smooth. Mix in sour cream and vanilla until well blended.
- Fold in diced peaches and mixed berries gently.
- Pour filling over the cooled crust. Bake at 325°F (160°C) for about 50 minutes until set but slightly jiggly in the center.
- Cool completely then refrigerate for at least four hours or overnight before serving.
