Instructions

  4. Add eggs one at a time, followed by milk. Mix well.
  5. Gently fold in lemon zest and chopped strawberries.
  6. Fill cupcake liners two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let cool completely before frosting.
  8. For the frosting, beat butter and powdered sugar until smooth; gradually mix in lemon juice until desired consistency is reached.
